Healthy Breakfast

SUNSHINE FOR BREAKFAST

Okay so this is my special way of doing up eggs!

- I also listed two different suggestions of ways to do this recipe, so I suggest reading all the way through to decide what you prefer, prior to cooking! :] 

Ingredients:
2 Eggs
a splash of milk
1 small onion (chopped)
4 cloves of fresh garlic (chopped or minced)
Less Than Half of 1 Yellow Pepper
1 Avocado
Bread/Bagel/Crackers (optional) 
Sugar
Olive Oil 
Salt
Any seasonings of choice (my go-to, are: basil, oregano, & paprika)

1.a. Chop the onions and sautee or carmelize them using olive oil (and a pinch of sugar if that's your style), Add several cloves of fresh chopped or minced garlic. 
1.b. Chop the yellow peppers into small squares, maybe not too small, and throw them in the sizzling pan with the onions, sprinkle some sugar over them and let them sautee a bit, too. 

2.a. Whisk the eggs in a bowl with a splash of milk. Pour egg into pan of sauteed garlic and onion. Quickly, before it begins to cook too much, add seasonings of choice or those listed above, and sprinkle some shredded cheese onto it. (Can add a little bit of salt here too if preferred).

{    2.b. IF YOU PREFER SUNNYSIDE UP EGGS - You can make this recipe without whisking the eggs, by cracking them in the pan and only cooking until one side is done, then flip quickly, as to avoid letting the yolk cook through. But be gentle so the yolk doesn't break or run in the pan. - If you choose this way, add the cheese on top once it's been flipped once. 
    2c. IF YOU PREFER 2B: Do not crack the egg in the same pan as the sauteed Veggies. Use a separate pan and once the sunny-side up eggs are done, place them on a plate, and pour the sauteed veggies mixture on top!  }

3. For Omelet Choice: Keep stove burner on a medium to low heat so that the omelet can cook through as much as possible without overcooking on one side.
I usually wait until the omelet seems cooked mostly through and try to take a peak at the bottom using a fork to lift it a little. If it seems golden/brown, I usually try to flip it then.
Once you think the bottom and middle have cooked enough to where you can, flip it over. (use two spatulas or two pans if needed, I am never great at flipping omelets :p)

(I used an "Everything" bagel but you can use any, or bread, or even crackers.)

3. Toast your bread/bagel of choice. 

4. you can toast some cut up avocado pieces and throw in a pan with some oil and garlic and salt, and toss it over top of your omelet when it's done; OR you can add it to the pan with your other veggies IF you are making Sunny-side up. 

5. Grab yourself a fork. Put a fork full of avocado, veggies and egg on your bagel/toast/cracker, and ENJOY [:
